The Easiest Way to Freeze Berries: Freezing in glass jars quickly results in freezer burn for me, and I often freeze berries for as long as a year. This isn’t ideal, but it works, and it’s cheap!
For chopped apples, I freeze the same way I freeze berries. However, I do fill up my glass Pyrex bowls with frozen apples as well, as Dave eats them daily so they aren’t in the freezer in a Pyrex lidded bowl for more than a few weeks typically. I typically stock up on applesauce apples from farmers in fall and fill the freezers for the winter.
And, naturally, my ferments stay in their glass jars until they’re used up.
You Knew I’d Bring This Up Again…
As the garden is finally crankin’ along (mmmm… fresh cucumbers!), I have lots of Lady’s Thumb and basil to harvest. I use a 50/50 mix of this to make my nutrient-dense pesto, which I store in glass jars in the freezer.
Every week I make pizza from scratch as Dave eats it over the weekend to save me on dishes/ cooking, and to celebrate getting through another week in this mad, mad world.
It’s tasty on veggies as well, and if I ate pasta, I bet it would be delicious on it!
As always, it’s an easy recipe, and it’s substitution-friendly. I’ve used some I froze over a year prior, and it’s always delicious!
It’s Back Again!
As I anticipated and mentioned in one of my gardening videos this year, the wildfire smoke, or more accurately, “wildfire smoke” from Canada is here again! Ever since the first summer it occurred, it’s been back to hang out with me and admire whatever is flowering around here at the time.
It’s not a welcome guest/ observer.
This time around, thus far at least, I see no smoke or haze in the air here. Rather, the sun is more blinding and feels more like being under a microwave heater than usual. (Ahem!) It also smells like pesticide outside.
So I’ve been doing as much as I can outside every day until either the heat is too oppressive or I start getting stupid from the chemicals in the air.
Fortunately, my garden is in high gear and the pollinators are here now that monarda has flowered, so I don’t have to pollinate by hand now. They’re sticking around for cucumber, peppermint, lemon balm, white clover, pumpkin, butternut squash, and self heal which are all flowering right now.
I just love seeing pollinators on flowers!
What Could Possibly Go Wrong? (External Link)
As if nature wasn’t confused enough already, with birds sometimes singing at night and nighttime insects loudly chirping all day some days, now man has decided it’s a good idea to turn night time into day time with a mirror up in the sky.
They’re super smart, so they’re dubbing it “a space mirror.” In further evidence of their artsy smartsy pants-ness, this wonderful technology is from Reflect Orbital, which bills itself as “The Sunlight Company”.
They’re just so clever and imaginative with their names! No wonder they make the big bucks!
These are satellites (dirigibles) that are already FCC approved, because acronym agencies always act in our best interests.
“If this first satellite proves itself, mission planners envision lofting 36 satellites by next year, 5,000 by 2030, and a staggering 50,000 by 2035.”
Awesome. I’m sure this won’t further destroy natural life at all.
Side note: Eärendil-1 is the name of the first satellite, after the Old English word for morning star.

Funny how these sorts of things always have Biblical names these days. It’s almost like these people know something the masses don’t.
